Ingredients:
For the Stuffing:
1 lb ground turkey
2 cups fresh spinach, chopped
1 cup cooked quinoa or rice
1/2 cup grated mozzarella cheese
1/2 cup chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
For the Peppers:
4 large bell peppers, tops cut off and seeds removed
1 cup tomato sauce
Instructions:
Prepare the Stuffing:
Preheat your oven to 375°F (190°C). In a large skillet, cook ground turkey over medium heat until browned. Add onions and garlic and cook until onions are softened.
Stir in chopped spinach, cooked quinoa or rice, mozzarella cheese, oregano, salt, and pepper. Cook for an additional 2-3 minutes until spinach is wilted.
Stuff the Peppers:
Spoon the turkey mixture into each bell pepper, packing it tightly. Place the stuffed peppers in a baking dish.
Bake the Peppers:
Pour tomato sauce over the stuffed peppers. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender.
Serve:
Serve the stuffed peppers with a side salad or additional tomato sauce if desired.
