Mushroom pate

Here's a simple recipe for mushroom pâté:

Ingredients:

  • 400g mushrooms (button or mixed varieties)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 2 tablespoons cream cheese or vegan cream cheese
  • 1 tablespoon soy sauce or tamari
  • Fresh herbs (like thyme or parsley)
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions:

  1. Sauté the Aromatics: In a pan, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and cook for another minute.

  2. Cook the Mushrooms: Add the mushrooms to the pan and cook until they're browned and have released their moisture (about 8-10 minutes).

  3. Blend: Transfer the mushroom mixture to a food processor. Add the cream cheese, soy sauce, herbs, salt, and pepper. Blend until smooth. If it’s too thick, you can add a little water or more olive oil.

  4. Taste and Adjust: Taste the pâté and add lemon juice, salt, or pepper if needed.

  5. Chill: Transfer the pâté to a container and refrigerate for at least an hour to allow the flavors to meld.

  6. Serve: Serve with crackers, bread, or vegetables.
